The Courtyard Welcomes a new Executive Chef - Michael Hay.
Originally from Kingston, Chef Hay received his training the old
school way - "apprenticing with great people", as well as in
culinary school. Chef Hay has plied his skills at Gusto (Kingston),
Deerhurst Resort, Black Cat Café (Ottawa), Courtyard Restaurant
under the leadership of Chef Marc Lepine, and most notably at Moto
(Chicago). Part of a new wave of young Ottawa Chefs interested in
sustainability and environmental issues, Michael believes Chefs have
the responsibility to ensure people eat well, both figuratively and
literally. He is very interested in finding and using new products
sourced locally that are underused, such as nettle, burdock, and
dandelion. Chef Hay continues the strong Courtyard tradition of
supporting many local farmers and producers. At the same
time Michael brings a playful sensibility to his french-based
classic cuisine, enticing diners with new riffs on familiar and
classic dishes. The Courtyard is very pleased to welcome Chef
Hay back to the restaurant!
