"The Courtyard kitchen cooks with regard to the seasons and the produce that accompanies them.  We believe that a menu should be fluid and use ingredients that are in their annual prime.  We strive to bring the majority of our produce from the soil surrounding our city and failing that, from Canada.  We also acknowledge flavours from other global regions and the role they play in supplying us.  It is our hope to prepare each dish with respect for our ingredients, our suppliers, and the techniques both new and old that we readily embrace."
